∗Takes only 5-10 minutes HOLLA

INGREDIENTS

  • 2 cups of Oat Flour (I always just throw the oats in my coffee grinder)
  • 2 Tablespoons of granulated sweeter of choice (Stevia, Coconut palm sugar, etc)
  • 1 Tablespoon of Pumpkin Pie Spice (cinnamon, nutmeg, all spice and pinch of ginger)
  • 1 teaspoon [+] of cinnamon
  • 1/2 cup of Pumpkin Puree
  • 1 teaspoon Pure Vanilla Extract
  • 3 Tablespoons [+or-] of nut butter (I like Cashew or Almond)
  • 1/4 cup of Maple Syrup or Brown Rice Syrup (I usually mix both because I’m crazy)

METHOD

  1. In large bowl combine DRY ingredients and mix [flour, sweetener, pumpkin pie spice, cinnamon]
  2. On stove or in microwave, heat and mix nut butter and maple/ brown rice syrup  until combined
  3. Add vanilla extract
  4. Pour your mixed and heated wet mixture and pumpkin puree to the dry mixture and mix well
  5. Using your hands, roll batter into bite sized balls, place on a baking tray, and Refrigerate for at least 10 minutes to stiff up
  6. Hide from your boyfriend/roommates/family because they will eat these all before you can take a pretty picture.. #RUDE 🙂

¤store in fridge or freezer in sealed container

*I like to finish these off by sprinkling them with a little extra cinnamon sugar mix!
