∗Only 10-13 minutes or so total #HOLLA #HellaFresh

∗Makes about 12 hearts

INGREDIENTS

  • 1 cup of soaked Cashews
  • 1 + 1/4 cup of dry Coconut (+ about 1/4 cup more to toast and sprinkle on top)
  • 1/2 cup of Oat Flour (quick oats grinder up)
  • 4 pitted Dates
  • Juice of 1 Lemon
  • Zest of 1/2 a Lemon
  • 2 tablespoons of Brown Rice Syrup (Add a pinch of Maple Syrup for fun)
  • 1/2 teaspoon of Vanilla Protein Powder—>Or 1 teaspoon Vanilla Extract (Or a little of both!)

METHOD

  1. Soak the Cashews for about 20 minutes
  2. Going your Oats; Place All of Ingredients into food processor
  3. Process until a dough forms; 1-2 minutes or so
  4. Preheat oven to 325°F and toast the 1/4 cup of finally shredded coconut for 4-7 minutes
  5. Spread dough out evenly, cut into desired shape, and sprinkle with toasted Coconut shreds
  6. Put your Bites in a sealed container and place in fridge to help hold form better —let it chill for a sec and chow down!

*Good for a week while stored in sealed container and placed in the fridge!–that is, if you don’t eat them all they your make them…:)*

*OPTIONAL- these can be rolled into ball, rolled in coconut and enjoyed just the same*
