I legitamentally make these almost every night for dinner. No words can express how obsessed I am with these babies!! I have made hella variations and believe the recipe posted below is the best one! -WARNING, you will become an addict-

–> Prep time is about 15 minutes; Cook time about 6-9 minutes


  • 1 bunch of Kale –> steamed in steamer/stovetop
  • 1 cup of Quinoa –> cook according to package
  • 1/2 Red Pepper
  • 1/2 Yellow Pepper
  • 1 Jalepeño (if you like the heat like me😏)
  • 2-3 Garlic gloves
  • 2 Shallots
  • A handful of raw Cauliflower
  • 1 Egg or Flax egg
  • 1/3 cup whole wheat flour
  • 3/4 cup Nutritional Yeast
  • 2 T Ginger
  • 2 T Rosemary
  • 1-2 T Oregano
  • 2 t Cayenne Pepper
  • Pink Salt & pepper to taste


  1. Prep a baking sheet and Preheat oven to 325’F -set aside
  2. Cook Quinoa –> 1c uncooked 2c water; bring water to boil; then cover, turn stove on low and cook for 12-15min
  3. Steam Kale–> cut/rip Kale into pieces; put stove on medium, add 1c of water to 1 bunch of Kale; cave and steam for about 5+ minutes
  4. Add 1/2 Red Pepper, 1/2 Yellow Pepper, 1 Jalepeño,2-3 Garlic gloves, 2 Shallots, raw Cauliflower to food processor and pulse till chopped
  5. Once diced, drain out all the water and place on your prepped bake sheet and dry in oven for 15-20 minutes
  6. Once all Ingredients above are completed add them and the ingredients-flour, nutritional yeast, and spices- to large mixing bowl
  7. Combine evenly and allow to cool
  8. Add in egg (or flax egg) and mix well/evenly
  9. Lastly, coat 1 or 2 saucepans w/ nonstick and use an icecream scoop to scoop pattie shapes on to pan
  10. Cook each side for about 4-5 minutes over medium heat (or until cooked and golden/crisp)
  11. Enjoy!

*When I started playing around with this recipe I didn’t roast my veggies from the processor in the oven, but after making them a billion time, I found that roasting them dries them out best and helps give the patties a great texture!
